We've explored Lexington a little bit in our free time. We even scored free UK tickets and took in our first basketball game {it was actually quite enjoyable, and a nice arena}.
We've hit a few new restaurants around town, explored the local Whole Foods for the Friday night "Flights after 5" beer tastings {we're officially obsessed}, and caught a movie at the historic Kentucky Theater downtown.
Alex is officially back into his classes full swing, so far it looks like he's going to enjoy his classes this semester, and I've been in full swing with my group fitness classes. Finding the motivation to work out has always been a challenge for me, but I love the gym I've found and I love my weekly Pilates classes.
I always felt like I was supposed to follow a certain regimen and I've come to the realization that what works for everybody else, doesn't necessarily work for me, and vice versa, so I've stopped feeling guilty about it and I'm loving it my way! Alex has even managed to get back to his work out schedule even with all of his classes, and has been getting up early in the morning to go run. It was difficult for him to find that motivation, but now we might just have a newly transformed early riser on our hands!
We've even decided to run a small 5k that takes place in our neighborhood in June to keep up the motivation! Now I just have to work on my cardio a little bit more... one thing at a time though!
We've still been loosely following the Abs Diet and eating a cleaner diet. I try to make dinner every night, even when Alex has class. It's good for me to keep on the same schedule, and Alex can come home and have leftovers instead of eating just a snack before class. I religiously use my Real Simple recipe app to find quick and easy recipes! It allows you to save recipes to your favorites and will automatically put the ingredients on a shopping list if you want. It was definitely worth the $5 {and I never ever pay for apps}.
Here's a gem we had the other night {this is quite similar to one of our favorite Abs Diet recipes too}
I was also quite adventurous one evening while Alex was at class and decided to try my hand at a Jeni's Splendid Ice Cream {a Columbus sensation} recipe called Queen City Cayenne. Homemade ice cream was very intimidating, but it came out pretty darn perfect! {Thanks again to Alex for gifting me with my Kitchenaid mixer and my wonderful friends for all of the amazing attachments they got us to go with it}. A few of my college girlfriends are coming to visit next month and I can't wait to try out another recipe for their visit. Now, what to make next is the question...
Along with my passion for food, I also exercised some brain power towards re-organization. Alex and I bought shelving for our laundry room and wanted to see how it all worked before we committed to re-doing the entire closet. Well, phase one {the left side} went so well that I bought the rest of the materials and put it all up while Alex was out of town in Cincinnati {the right side}! I impressed myself, but even more impressive, is the fact that I impressed Alex with my skills, which I credit to him in large part.
Usually in my free time you can find me re-organizing something in the house. This past weekend I emptied out the fridge and re-organized it on the fly. I'm not sure why simple things like this bring me such pleasure, but they do.
This upcoming weekend Alex and I will be traveling to Cleveland, and I'll have the chance to take part in some re-organization there as well. Hopefully there will be some time to relax and celebrate my Father-in-Law's birthday too! I'm pretty positive beer drinking and talking about beer making will also be on the agenda.
It's perfect timing for this trip because I've been home officially too much lately because I find myself a little bored and uninspired. No matter what I say though, I'm always ready to come back home to our Old Kentucky home at the end of the weekend.
